What do you do when life gives you potatoes? Make potato salad! My CSA box runneth over with potatoes this week. More potatoes than you can shake a stick at! This weekend there also happens to be a potluck at my CrossFit box so…potato salad it is!
Mountains of potatoes, chopped & steamed until soft (I left the skin on since it’s highly nutritious & delicious I just made sure to scrub them thoroughly.)
2 ears corn, steamed & de-kerneled
Green beans, chopped into 1-inch pieces & blanched (~12 oz)
Chopped cucumber (1-2 cucumbers)
Chopped grape tomato (1/2-1 pint)
2 cans cannellini beans
1 red onion, sliced & pickled (marinated in white wine vinegar and a pinch of salt for at least 15 min)
1/2 cup mustard
2 T white wine vinegar
1 clove garlic, crushed OR a few shakes of garlic powder
2 T nutritional yeast
1/2 cup homemade mayo (I left out the sugar & onion powder)
Toss the salad ingredients together in a large bowl after all the veggies are cool.
Make the mayo and then the dressing in a blender.
Toss the salad & the dressing.
Serve at a potluck, bring to a picnic, eat on your patio, at the pool, beach, etc!
NB: the next day I had it over arugula & baby spinach with some crumbled steamed tempeh for an extra protein boost. I added a bit more dressing watered down with vinegar to coat the greens. Yum!!!
