Summer chickpea peach salad with lemon mustard balsamic vinaigrette

Makes 2 servings

Generous amount of lettuce, spinach, and/or other salad greens
1 cup cooked/canned chickpeas
1 peach, chopped
1/2 avocado, chopped
2 T pumpkin seeds
1 cup cooked quinoa (optional)

Dressing (I didn’t measure so just experiment with the flavor & amount you like):
All-natural Dijon mustard
Balsamic vinegar
Fresh squeezed lemon juice

Sit on the patio/porch or by the pool and enjoy with some fruity iced tea in the sunshine 😎☀️
