This recipe was my inspiration…this is what I did:
Edamame & green pea hummus:
2 Tbsp. Flavored extra-virgin olive oil (sundried tomato)
1 1/4 cups shelled edamame
1 cup green peas
1/3 cup freshly squeezed lemon juice
3 Tbsp. tahini
3 Tbsp. Nutritional yeast
1 clove garlic
1/4 tsp. ground cumin
1/4 tsp. red pepper flakes
And it is soooooo yummy. Warning:addictive!!!! Bring with a bottle of white wine to your next summer shindig!!
Sliced cucumbers, bell peppers, zucchini, summer squash
Cauliflower/ broccoli florets
Flackers (raw crackers made from flaxseed! Super healthy & yummy!)
Or if you want to get really indulgent:
Regular crackers or pita chips😱
On a sandwich with veggies & avocado
(Or if you’re feeling super naughty just lick it off your fingers…😛)
Any way you would eat hummus basically!
