These are delicious !
I baked them for about 30 minutes at 400. The recipe made a TON..about 30 good-sized balls. The serving possibilities are endless. I’d recommend serving them with a whole grain (quinoa or brown rice) and some steamed or sautéed veggies and some kind of sauce. Any sauce! Tomato, tahini, hummus, chimichurri, balsamic, miso…you could seriously eat these every day for two weeks with a different sauce and different grains/veggies and never get bored! Which is probably what I’m going to be doing. Yum!!! 😊
Another yummy variation…possibly my favorite so far
Spinach & baby greens
Red bell pepper, cucumber, cherry tomatoes
Roasted golden beets & carrots
Lentil balls topped with hummus (or you could sub avocado)
Drizzled with aged balsamic vinegar
