Energy bars

Check out No Meat Athlete’s Energy Bar formula! The possibilities are endless & delicious & great healthy fuel!

Here are some of my favorite variations:

Oatmeal Raisin Nut Cookie

1 can cannellini beans (drained & rinsed)
1/4 cup ground flaxseed whisked together with 1/4 c boiling water
1 overripe banana
1/4 cup chopped dates
1/4 cup coconut water
1 tsp vanilla
1 tsp cinnamon
1.5 cups oats
1 cup vanilla protein powder (I use Vega)
1/4c walnuts
1/4c pecans
1/2 cup raisins

Preheat oven to 350.
Break out the food processor. Blend beans, flaxseed/water, banana, dates, coconut water, vanilla & cinnamon until smooth.
Add oats & protein powder and pulse until combined.
Then mix in or pulse the remaining ingredients until blended.
Spread onto a 9×13 in baking pan and bake 15 min. Cut into squares and enjoy! These are sweet & irresistible!

I figured out the nutrition info for the oatmeal raisin nut ones:
Serving size: 1 bar (1/12 recipe)
Calories: 200
Fat: 6g (27%)
Carbs: 27g (54%)
Protein: 10.5g (21%)
This is a pretty ideal ratio!

Peanut Butter Goji Berry

1 can cannellini beans (drained & rinsed)
1/2 cup peanut butter
1 overripe banana
1/4 cup chopped dates
1/4 cup coconut water
1 tsp vanilla
1 tsp cinnamon
1.5 cups oats
1 cup vanilla protein powder (I use Vega)
1/2c goji berries
1/4c hemp seeds
1/4 c pumpkin seeds

Preheat oven to 350.
Break out the food processor. Blend beans, PB, banana, dates, coconut water, vanilla & cinnamon until smooth.
Add oats & protein powder and pulse until combined.
Then mix in or pulse the remaining ingredients until blended.
Spread onto a 9×13 in baking pan and bake 15 min. Cut into squares and enjoy!

Vanilla Tahini

1 can cannellini beans (drained & rinsed)
1/2 cup tahini
1 overripe banana
1/4 cup chopped dates
1/4 cup coconut water
1 tsp vanilla
1 tsp cinnamon
1.5 cups oats
1 cup Vega vanilla protein powder
1/4 cup each gojiberries, hempseeds, shredded coconut, pumpkin seeds

Preheat oven to 350.
Break out the food processor. Blend beans, tahini, banana, dates, coconut water, vanilla & cinnamon until smooth.
Add oats & protein powder & pulse until combined.
Then mix in or pulse the remaining ingredients until blended.
Spread onto a 9×13 in baking pan and bake 15 min. Cut into squares and enjoy!

Chocolate Peanut Butter:

1 can black beans (drained & rinsed)
1/2 cup peanut butter (or any nut butter)
1 overripe banana
1/4 cup chopped dates
1/4 cup water
1 tsp vanilla
1 tsp cinnamon
1.5 cups oats
3/4 cup chocolate protein powder
1/4 cup cocoa powder
1 cup combo of: raisins, gojiberries, hempseeds, shredded coconut

Preheat oven to 350.
Break out the food processor. Blend beans, nut butter, banana, dates, water, vanilla & cinnamon until smooth.
Add oats, protein powder & cocoa powder and pulse until combined.
Then mix in or pulse the remaining ingredients until blended.
Spread onto a 9×13 in baking pan and bake 15 min. Cut into squares and enjoy!

Vanilla Apricot Ginger

1 can white beans (drained & rinsed)
1/4 cup ground flaxseed whisked together with 1/4 c boiling water
1 overripe banana
1/4 cup chopped dates
1/4 cup coconut water
1 tsp vanilla
1 tsp cinnamon
1 tsp ginger
1.5 cups oats
1 cup vanilla protein powder (I use Vega)
1-2 T hemp seeds
1/2 cup shredded coconut
1/2 cup chopped apricots

Preheat oven to 350.
Break out the food processor. Blend beans, flaxseed, banana, dates, water, vanilla, cinnamon & ginger until smooth.
Add oats & protein powder and pulse until combined.
Then mix in or pulse the remaining ingredients until blended.
Spread onto a 9×13 in baking pan and bake 15 min. Cut into squares and enjoy!

Vanilla PB

1 can pinto beans (drained & rinsed)
1/2 cup peanut butter
1 overripe banana
1/4 cup chopped dates
1/4 cup coconut water
1 tsp vanilla
1 tsp cinnamon
1.5 cups oats
1 cup vanilla protein powder (I use Vega)
1/4c hemp seeds
1/4c goji berries
1/2 cup raisins
