Mango Black Bean Edamame salad


Now that it’s getting a tad warmer it’s time for bean salads! This is super easy, super healthy & super yummy!

Makes a ton!

1 can back beans, drained & rinsed
1 bag frozen shelled edamame, cooked according to package
1 bag frozen corn, cooked according to package
1 large mango, ripe but still firm, peeled & chopped
1 red bell pepper, chopped
1/2 red onion or sweet onion, chopped
1-2 avocados, chopped & added at the last minute
1 bunch of cilantro, de-stemmed, leaves chopped
1 lime, juice squeezed

Mix all the ingredients together and voila!
If you won’t be serving it right away hold off on the avocado. Add the avocado when you are ready to serve it so it doesn’t go all brown.
You can also add a little oil or salad dressing (also salt to taste) if you want more flavor. I’m just trying to keep it super simple and clean and I think it’s yummy as is, but for people who aren’t used to eating that way it may need a little something 😊 enjoy!
