Party in a bowl (AKA salad) featuring edamame, quinoa and more with tahini dressing


Say the word “salad” and your typical average person’s eyes start to glaze over as it conjures images of a bowl of iceberg lettuce shoved off to the side…which is why I’m calling this “party in a bowl” because it’s so much more than salad!

I had forgotten how much I love edamame in salad!! Yumm!!! This was kind of a look in the fridge see what looks good and throw it all together kind of salad but it turned out great!!

Specified amounts are per 1 serving

Baby spinach
Sunflower sprouts
1/2 cup cooked quinoa
1/2 cup thawed/cooked frozen shelled edamame
Red bell pepper, chopped
Chopped apple
1/3 avocado chopped
1 T pumpkin seeds

Tahini dressing:
Fresh squeezed lemon juice
Splash of low sodium tamari

I didn’t really measure the dressing you just have to see how much of each ingredient you need to achieve your desired taste and consistency.

This is easy & yummy!!!!
