Avocado dressing


So I experimented today with using avocado instead of oil…I’m trying to cut back on oil and get most of my fats from whole foods like avocado, nuts, nut butters & seeds. I love my salads to be nice and moist but not heavy & oily. I put an avocado in my Vitamix and added some apple cider vinegar & water. I didn’t measure anything, you just have to experiment with amounts to achieve the taste & consistency you desire. You could also add lemon juice instead of or in addition to the vinegar (I think that would be even better!) and add seasonings to taste! Creamy & yummy… tahini is still probably my favorite but it has a heavier & more pronounced flavor so the avo is great for a milder dressing that is still super creamy!!! Mmmmmmmmmmmmm
