I was inspired by these two recipes:
http://www.onegreenplanet.org/vegan-recipe/raw-healthy-asian-carrot-avocado-salad/
http://www.veggiegirl.com/2014/01/17/asian-inspired-mandarin-orange-salad/

Salad:
Celery, chopped
Green onion, chopped
Carrot, grated/shredded (I used a food processor)
Edamame (I used frozen shelled, thawed)
Slivered almonds (I’m not fancy so again I just used the food processor)
Sesame seeds
Hemp seeds
Cilantro
Mixed greens, spinach, and/or shredded kale
Avocado, chopped
Mandarin orange or clementine sections

Dressing:
2 T ume plum vinegar (or sub apple cider vin)
2 T sesame oil
3 T lime juice, fresh
1 T cilantro or coriander
1 T minced fresh ginger
1 tsp agave

Chop everything & throw it all together except for the greens & avocado & oranges. Prepare the dressing. When ready to eat, serve over the greens & add the avocado & oranges & toss in the dressing!

It’s a salad so I didn’t specify amounts for everything, just do your thing! Enjoy!
