Pantry essentials

Recently two good friends and colleagues have expressed interest in adopting a vegan diet and have enlisted my help! One of them requested a list of pantry essentials. This is what I typically keep stocked in my kitchen:

Beans: Chickpeas, cannellini beans, red kidney beans, black beans, black-eyed peas, pinto beans
Canned tomatoes
Canned pumpkin
Dried lentils
Quinoa
Brown Rice
Nutritional yeast
Coconut water
Coconut milk
Low-sodium tamari
Mustard
Hot sauce
Vegetable broth
Oats
Nuts: cashews, almonds, peanuts, walnuts, pecans, Brazil nuts
Seeds: pumpkin, flax, sunflower, hemp, chia, sesame
Shredded coconut
Dried fruit: raisins, dates, prunes
All your basic spices and dried herbs
Vegan protein powder
Vitamin B12 supplement
Peanut butter
Tahini
Miso
Maple syrup
Produce: Bananas, apples, leafy greens/kale, spinach, avocado, onions, garlic, sweet potatoes, baby carrots, lemons, limes
Tempeh and/or sprouted tofu
Freezer: leafy greens/kale, peas, fruit (blueberries, raspberries, mixed berries, mango)
Herbal tea
