Roasted veggies with a kick!

This dish was inspired by this recipe from MindBodyGreen (check them out & like them on FB it is an awesome site!!).

Here is what I did:

Veggies (all roughly chopped):
1 lb Brussels sprouts
1 small-medium butternut squash
1 head cauliflower
2 carrots
1/4 yellow onion

Toss with:
A smidge of olive oil
Sprinkling of: cayenne pepper, cinnamon, salt & pepper

After roasting, toss with:
1/4 cup soaked goji berries
Cooked quinoa (1/2 cup dry cooked according to package)

Dressing:
1 T olive oil
1 T balsamic vinaigrette
1 T apple cider vinegar
2 T mustard
1 small clove of garlic
Tiny splash of maple syrup
Smidge more cayenne if you like it hot

Chop the veggies and toss them with the oil & spices. Roast the veggies at 400 degrees for about 20 min or until roasted to perfection (tender & browned). Don’t forget to stir/toss midway through roasting. You will need two large trays to fit aaaalllllllllllll those delicious veggies 🙂 In the meantime prepare the quinoa and the dressing.
Then toss the veggies with the goji berries & quinoa & the dressing. Serve, savor mindfully, enjoy 🙂
