No I did not misspell that…it’s raw granola! I was inspired by a fellow vegan blogger Lori to try this. The top photo is hers and the bottom less glamorous one is mine 🙂 Here is her site. Check her out!

Makes a big batch:
1 1/3 cup oats
4 pitted dates
4 prunes
Splash coconut water
1/3 cup almonds
1/3 cup shredded coconut
1/3 cup pecans
1/3 cup walnuts
2 T pumpkin seeds
2 T hemp seeds
2 T ground flaxseed
1 tsp cinnamon
1 tsp ginger

Serve with:
Nut milk
Fresh sliced banana &/or blueberries &/or chopped apples

Put the oats, dates & prunes & splash of coconut water (or plain water or juice) in a food processor and process until combined & crumbly.
Then put the nuts and apple (cut into chunks) in and process until desired consistency (or just chop).
Mix everything together!
Top with banana & nut milk & fresh fruit and enjoy!

I encourage you to experiment with different ingredients and ratios and see what you like best!
