Lentil & potato salad with miso tahini dressing

Happy New Year!!!
Start your year off right with this yummy healthy salad!
I normally don’t use white potatoes since they don’t have a ton of nutritional value, but they are a whole food, and as long as you don’t fry them or drench them in butter, why not?? I had them lying around leftover from when I bought a huge bag for my Hanukkah latke pie and they were starting to go so I decided this was a good way to use them up! I never waste decent food! They are great paired with the creaminess of the dressing and the avocados.
Lentils are a great go-to since they pack a serious punch when it comes to protein and fiber and I find them easier to digest than other beans…

This was a throw-everything-together-on-whim kind of meal so I don’t have exact amounts…just experiment and taste and adjust accordingly 🙂

Lentils (makes several servings):
1 cup dried lentils
Coconut or olive oil
1/2 yellow onion, chopped
1 clove garlic
Sprinkling of Nutritional yeast

Salad:
Spinach or other salad greens
Steamed red potatoes, cut into chunks
1/4-1/2 avocado, chopped (for one serving)

Dressing:
Miso
Tahini
Apple cider vinegar
Fresh squeezed lemon juice
Water to achieve desired consistency

Toppings:
Nutritional yeast
Sesame seeds

Start by simmering the lentils in water until softened.
Sauté the onions in the oil for a few minutes and then add the garlic and then the lentils and nutritional yeast. If needed throw in a splash of water or veggie broth to deglaze the pan.
Set aside.
Prepare the dressing.
Assemble the salad, add the lentils, dress the salad & top with the nutritional yeast & sesame seeds. Enjoy!!!

Update:
Ran out of potatoes so made this with quinoa instead of potatoes and it was even better!
Then when I ran out of lentils I made it with quinoa and orange pepper and sundried tomatoes and it was still fabulous!
