If you have leftover quinoa & leftover hummus & some raw veggies & avocado lying around, this salad is ready in minutes!
Sorry no photo for this one (I didn’t think it was going to be blog-worthy until after I ate it!) (my pix are no good anyway :P) you will just have to use your imagination!
Spinach or other salad greens
Cooked quinoa (about 1/2 cup)
Chopped raw veggies (I used orange pepper & celery)
Avocado (1/4 large avocado or 1/2 small avocado)
Optional toppings: chopped black olives, pumpkin seeds, sunflower seeds, nutritional yeast
Dressing: leftover hummus mixed with fresh lemon juice and apple cider vinegar (a brilliant idea if I do say so myself!!)
Toss together & enjoy!!
