This morning I was in the mood to change up my breakfast routine. I had leftover baked sweet potatoes from Thanksgiving. This does not look so appetizing but I assure you it was delicious!!
~1 cup leftover baked sweet potato
1 overripe banana
1 T peanut or almond butter
1 T ground flaxseed
1 T pumpkin seeds
Sprinkle of cinnamon
Put the sweet potato and banana in a bowl and mash with a fork and mix it all together! Then add all the remaining ingredients and mix well. You can also do this in a food processor or blender (add some nut milk if you want a creamier texture.) Can be served cold or heated up! Yum!
