Hanukkah!

This year at my annual Hanukkah party, instead of the traditional latkes, I made a baked latke pie!

Serves 12
2 lbs russet or red potatoes
2 lbs sweet potatoes
2 onions (I used one sweet & one yellow)
3 cups oats
3 T ground flaxseed
Salt & pepper
Oil

Preheat oven to 425.
Wash and shred the potatoes in a food processor.
Grind the oats into flour in a blender.
Mix all the ingredients except oil in a huge bowl or two smaller bowls.
Cover your vessel with oil and heat it for a few minutes in the oven. I used a glass pie plate but you could use a cast-iron skillet, cookie sheet, whatever works for you. You will have to do this in multiple batches. After the oil is heated, pour a layer of the mixture in and bake until the top is crispy, about 20 minutes.

Top with cashew sour cream, applesauce, or Mama Stamberg cranberry relish (made with my vegan sour cream or vegan yogurt).
