Raw energy bites

I made these Super Easy raw protein balls to replace the super pricey energy bars you can get at the store. You can mix & match with whatever fruit & nuts you like! Keep it simple with one of each or go crazy with combos!

I was inspired by this recipe from One Green Planet but here is my take:

Makes 10 servings

1 cup dried fruit (raisins, dates, cranberries, prunes, figs…)
1 1/2 cups nuts & seeds (walnuts, pecans, almonds, cashews, pumpkin seeds, flaxseed, hempseed…)
Optional: 1-2 scoops protein powder or 1-2 T cacao powder, maca, carob powder etc.

Put the dried fruit in your Vitamix (or high-speed blender) and blend (you may need to add a tiny bit of water or coconut water or lemon juice).
Take out & put in a mixing bowl.
Blend the nuts/seeds until finely ground (but not yet nut butter).
Then add to the mixing bowl & add any remaining ingredients and mix with your hands.
Form into balls or bars. Store in the fridge.
