Moroccan butternut quinoa with Collard greens

I substituted quinoa for the couscous because it’s less processed and more nutritious (higher in protein etc.) Couscous is basically pasta. I added collard greens because greens make everything better & more nutritious! I added them in at the end and just sautéed them with the veggies until wilted. I used less raisins (1/3 cup instead of 1/2) since that’s a lot of sugar. I used extra cilantro…YUM…so fresh…and tossed in some nutritional yeast for extra protein and other nutrients plus good flavor! Delicious!
