Quinoa with summer squash, chickpeas, apples, and Swiss chard

1 cup quinoa, cooked (2 c water, simmer until water is absorbed, 15-20 min)
1 onion, chopped
Olive oil
1-2 cloves garlic minced or crushed
3 small summer squash, sliced
1 bunch Swiss chard, stems chopped, leaves torn to bite size
Salt & pepper
1 can garbanzo beans, rinsed
1 apple, chopped
5 T pumpkin seeds

Cook the quinoa. Meanwhile, sauté the onion in olive oil. When it starts to soften, add the garlic, squash, Chard stems, salt & pepper. Once veggies are tender, remove from heat and immediately stir in Chard leaves, chickpeas & quinoa. Then add chopped apple & pumpkin seeds. Serves 5.
