The un-boring Bean Salad


Started with this recipe from Kris Carr.
Based on my CSA box & personal preference, I made it like this:

1 can garbanzos
1 can kidney beans
1 can black beans
1/2 cup dry quinoa, cooked (1 cup water, simmer until water is absorbed ~15 min)
Green beans, ends trimmed, halved, blanched (boil for 1 min then plunge into ice bath) (I used ~1 lb)
Tomatoes, chopped (I used lots…3 medium tomatoes plus about a pint of cherry & grape tomatoes)
2 small green peppers, chopped
3 small apples, chopped
Green onions, white & light green parts sliced (1 bunch)
3 stalks celery, chopped
5 T apple cider vinegar
1 T olive oil
1 tsp maple syrup
2 tsp mustard
Several shakes ground cloves
Salt & pepper

Chop, mix, enjoy!!! Yummy lunch!!!

This makes about 5 servings
