Mmmmmm ratatouille perfect late summer/early fall dish!! Healthy, hearty, local, seasonal, harmonious, delicious!!! 🙂 I started with this lovely recipe and:
Added mushrooms. They were local & seasonal & looked yummy & pair nicely with the other ingredients.
Used cannellini beans since they are my fave white bean.
Sautéed the onions & garlic & then threw that & all the other ingredients in the slow cooker.
After I turned off the cooker I added spinach (along with the parsley) and stirred it around while it was still hot and that cooked it nicely. I could have done the same with the beans but I put them in earlier.
Added hot sauce at the end to serve.

Yum!!!!! 🙂
