Summer harvest goody salad!!!


Oh summer!!!!! How I love thee 🙂

This makes one entree serving or 3 side salads. You can double, triple, quadruple as necessary 🙂

1 local heirloom tomato, coarsely chopped (they were on sale…but they are $$$$…you can also sub any delicious fresh local tomatoes!)
1 fresh local peach, coarsely chopped (yellow, white, donut…your call. I used yellow)
1/2 avocado, chopped
1/2 small red onion, thinly sliced
1 T pumpkin seeds
Big old bowl full of your favorite salad greens (spinach for me! But you can also use arugula, romaine, mixed greens, combo, etc.)
Dressing: simple balsamic vinaigrette: EVOO + Balsamic vinegar + salt & pepper
OR your favorite vegan dressing/whatever you have lying around. You could try something creamy or something sweet.

This is SO quick & easy! Just fill your bowl with greens then add the tomatoes, peaches, onions, and top with the avocado & pumpkin seeds. Then dress. Enjoy!!!! YUM 🙂
