I was looking for a good gazpacho recipe and I couldn’t decide on one so I just combined my favorite elements of each:

1 1/2 pounds tomatoes
1 large cucumber (peeled if the skin is icky)
2 stalks celery
1 cup coarsely chopped cantaloupe
1 cup coarsely chopped watermelon
3 green onions
1 clove garlic
1 jalapeño (seeded)
2 tablespoons Olive oil
2 tablespoons sherry vinegar
Juice and zest from one lime
Handful of basil leaves
1/4 cup cashew coconut yogurt (optional)
Salt and pepper to taste
For serving:
hot sauce to taste (optional)
Cashew coconut yogurt (optional)

Coarsely chop all the ingredients and blend them in a food processor or high-speed blender. I started with the tomatoes and blended them first, then added the cucumbers and blended them, and so on. Chill for at least an hour in the fridge. Serve with chopped avocado, hot sauce & yogurt if you like. Yum!
