Raw veggie “burger” kale wrap


Veggie burger (makes a lot!!):

1 lb unsalted raw nuts ground in food processor (I used almonds because I had a ton…you could do a combo of walnuts, pecans, almonds, cashews, whatever you like or have in excess…just not peanuts of course!)
1 lb carrots coarsely chopped
1 medium onion coarsely chopped (I used yellow but white or sweet would be good…I’d avoid red because its a stronger flavor raw but if you like that go for it!)
1 T olive oil
2 T seasoning (whatever you like! I used Braggs sprinkle)
2-3 T nutritional yeast (optional but I’d definitely use it if you have it or can easily get it)
Optional: 1 T sweetener…dates, raisins, or agave

Serve with:
Sprinkle of Paprika on top
Large kale leaves
Sliced tomato
Sliced avocado

Throw the veggie burger ingredients in the food processor (make sure to process the nuts separately first, then add everything else)
Then form some of the mixture into a patty and put it on a large Kale leaf (store the rest in Tupperware in the fridge until next time!). Top with a sprinkle of paprika and the sliced tomato & avocado. Pick up the whole thing and eat with your hands as a wrap! Keep napkins handy and enjoy!! Happy raw summer!
