I used store-bought! Just make sure you read the ingredients. Or make your own…tons of great vegan crust recipes out there!
1 1/2 cups soaked cashews &/or macadamia nuts
2/3 cup coconut water
Juice & zest of one lemon
1/4 cup agave or maple syrup
1/4 cup melted coconut oil
1/4 tsp vanilla
Pinch of salt
Put all ingredients in a high-speed blender (hello Vita Mix!) and blend until smooth!
Pour over crust. Let chill for at least an hour in the fridge and then add fruit just before serving.
Your favorite fresh or frozen fruit! This one has raspberries, blueberries, strawberries, pineapples & kiwi. I used mom’s faves.
